Our finest Chinese Matcha is carefully cultivated from shade-grown tea plants which are stone-ground to produce a fine, bright green powder. This results in the most authentic experience when preparing and drinking this very special tea.

When prepared it boasts a strongly flavoured and vibrantly green liquor with a distinct grassy and herbaceous taste and aroma. To Enjoy

A cup can be prepared at any time by adding 1 tea spoon of powder per cup to hot but not boiling water, and whisking or stirring well into the water. This tea is best enjoyed once the powder has fully dissolved evenly in the water and without milk or sweeteners.

About Matcha Taishan

Matcha is a type of powdered green tea that is traditionally used in Japanese tea ceremonies. It is made from shade-grown tea leaves, a process that enhances the flavour and texture of the leaves. The leaves are ground into a fine powder, which is then whisked into hot water, creating a frothy and flavourful beverage.

Matcha is made from tea leaves that are grown under shade for about 20-30 days before harvest. This process increases chlorophyll levels, giving Matcha its vibrant green colour, and promotes the production of amino acids, contributing to its unique flavour profile.

Matcha is available in different grades. Ceremonial grade is the highest quality and is often used in traditional Japanese tea ceremonies. Culinary grade is used in cooking and baking, providing a more affordable option with a slightly stronger flavour.

It has a rich, complex flavour with a balance of sweetness, umami, and a slight bitterness. The shade-growing process contributes to the development of amino acids, particularly L-theanine, which gives Matcha its characteristic umami taste.

To prepare matcha, the powder is whisked into hot water using a bamboo whisk (chasen). The resulting beverage is smooth, frothy, and provides a concentrated burst of tea flavor.
